I’d like to see IHOP, Denny’s, and other breakfast-heavy chains adopt: -cage-free eggs. -vegan pancake batter as default (their customers never have to know, and it would be cheaper for them if they can replace eggs with, say, part protein powder, corn starch, and a touch of extra rise agent) - eggless scramble option, like with Just Egg or tofu.
Boring answer: big/many corporate cage-free and broiler chicken welfare commitments.
