The stress response part reminds me of a video a few years back where they said (IIRC) that one of the reasons dead fish flesh often smells is the effect of stress on their bodies in dying.
When killed fast as in certain traditional-japanese cooking their flesh an be left for a long time without smell as the stress response wasn’t triggered.
